In honor of my man's birthday and a weekend celebration with friends, I made these cake pops. Of course, they were also in honor of the Milwaukee Brewers and how amazingly awesome they are...especially this year! I think these were a lot better tasting then the first time I made cake pops, but they were also a lot more work with the decorating process. Just an FYI, cake pops take me forever to make. I will probably never make them again...because they are too much work! :) I know they are becoming more popular to make, and maybe other people are just more efficient or more patient than I am. But who knows, maybe I'll break them out for special occasions only. The whole process with cake making and decorating took about 5-6 hours. For a dessert - that's a long time. For anything, that's a long time!! So be forewarned, if you intend to make these...I would split it up between a couple days and make sure to set plenty of time aside for the process!
Ingredients:
1 box butter pecan cake mix (or any flavor) (cook as directed on box for 13 X 9 cake)
1 can cream cheese frosting (16 oz.)
Directions:
1. After cake is cooked and cooled completely, crumble into large bowl.
2. Mix thoroughly with 1 can cream cheese frosting. (It may be easier to use fingers to mix together, but be warned it will get messy.)
3. Roll mixture into quarter size balls and lay on cookie sheet. (Should make 45-50) Depending on what shapes/decor you want to do...you can either roll the cake into balls or use mini cookie cutters to make the cake & frosting mixture into different shapes.
4. Chill for several hours. (You can speed this up by putting in the freezer or leave in the fridge overnight.)
5. Melt candy melts (various colors can be found at JoAnn's or Michaels) or chocolate bark in microwave per directions on package.
6. Dip sticks in melted chocolate/candy and stick in balls so that the sticks will stay in the cake balls. Chill again for 10 minutes.
7. Dip cake pop into melted candy bark/chocolate until completely covered and stick into Styrofoam upright until cooled completely. For these I did not put sticks in the baseballs, just the "baseball mitts." Depending on your design, you may not have to put them upright, you could have the stick on top and the cake pop on bottom.
Serve immediately or keep covered or in the fridge until you serve them.
