Arugula Apple Salad


This salad is really crisp, refreshing, and delicious! The lemony dressing with shallots (mmm...I love shallots!) mixed with apples, arugula & radishes definitely gave it a bright, citrus flavor. To cut back on the sour - you may want to use a sweeter apple, or maybe even add a little sugar to the dressing.
Ingredients
2 tablespoons fresh lemon juice
3/4 tablespoon shallots, finely chopped
1/4 teaspoon finely grated lemon peel
2 tablespoons extra-virgin olive oil
1 small green apple (or pink lady for a sweeter taste), quartered, cored, cut into matchstick-size strips or thin wedges
5 radishes, trimmed, thinly sliced
1 tablespoons coarsely chopped fresh Italian parsley

Directions
Combine lemon juice, chopped shallots, and grated lemon peel and lemon juice in small bowl. Gradually whisk in oil. Season dressing to taste with salt and pepper. DO AHEAD: Can be made 2 hours ahead. Let stand at room temperature. Rewhisk before using.
Combine arugula, radishes, and parsley in large bowl. Toss salad with dressing and serve.

yay! I was just hoping to find some recipes with radishes in them since I was considering planting some in my garden this year. I'll have to save this one to try. :)
