B.L.A.T.'s...aka: BLT's but better.


 B.L.T.'s are so basic, so easy, and so delicious...but add some avocado, and you have a B.L.A.T. - which may sound gross, but actually they are even more delicious! Actually the "L" should be replaced with "S" because I used Spinach instead of Lettuce - but oh well.  I am looking forward to making these even more this summer!  They always remind me of summer...

First, you start with the simple ingredients:

Ingredients
4 slices bacon per sandwich
Fresh spinach
Fresh tomatoes (3-4 slices per tomatoes)
Fresh avocado
Spicy Guacamole mix
Salt
Pepper
Mayo
Whole grain bread
Directions: 
Peel and slice one avocado.  Mash avocado in a bowl with a fork or pastry blender.  Add some guacamole mix, salt, and pepper.  (if you don't have guacamole mix you can just add some of your own spices such as cayenne pepper, onion powder, garlic powder, salt & pepper)  Pan-fry the bacon, just until crisp.  Drain on paper towels.  Toast the bread until golden brown.  Spread the mayo onto one slice of bread, and the avocado on the other.  Layer the bacon, tomato, and spinach on one piece of bread and top with second piece of bread.  Cut sandwich in half and enjoy!  Serve with chips and salsa or your favorite side.
