Homemade Waffle & Pancake Mix


oh hello.  good morning. 


I've tried to eliminate all pre-packaged and box mix foods from our home for awhile now.  I have been able to cut out everything except tortilla chips and crackers because I haven't taken the time to make my own.  For the most part we try to eat whole foods, grains, etc. (but we do cheat often).  However, we love making pancakes or waffles on the weekends and it was always so easy to buy the "ready-to-go" box of pancake mix from the store.  The instant pancake mixes often have "partially-hydrogenated oils" among other fun little ingredients that I can't pronounce.  This homemade mix is not only much healthier - it is delicious and easy to whip up quickly on those mornings when you want breakfast within minutes...

Homemade Waffle and Pancake Mix
Dry ingredients
4 cups flour
3 tablespoons baking powder
2 teaspoons baking soda
1 teaspoon salt
3 tablespoons sugar

Directions
Combine all ingredients in a bowl. Pour and store in an air-tight container. Use within 3 months.


To make waffles (or pancakes):

Ingredients
1 cup dry pancake mix
1 egg
1 cup almond milk
1 teaspoon melted butter or oil
1 teaspoon vanilla extract
1 teaspoon cinnamon (if desired) 

Directions
In a bowl, combine 1 cup of dry pancake mix, 1 egg, 1 cup of milk, 1 teaspoon oil or melted butter, and 1 teaspoon vanilla extract. Heat waffle iron or griddle and lightly grease with cooking spray. Pour 1/4 cup of batter on waffle iron or griddle. Cook about 3-4 minutes in waffle iron, or until lightly brown and crispy.  Pour plenty of pure Wisconsin maple syrup in the wonderful little pocket squares of the waffles. :) 

Makes about 8 pancakes or 4 waffles.
