Pumpkin Tomato Pasta feat. Newman's Own & Video!

Lights. Camera. Action.  

I was SO excited when I found out that I was lucky enough to be chosen by Foodbuzz and Newman's Own to create a recipe video to be featured on the Foodbuzz and Newman's Own website!  I had to submit my recipe proposal and video idea and I was one of the Foodbuzz featured publishers to be sent a free Flip HD camera to record the video and keep!   Thank you Foodbuzz and Newman's Own!

The recipe I chose to make features one of my favorite fall ingredients: pumpkin! (if you are a regular reader you may have noticed that almost every recent blog post includes a recipe with pumpkin) 

I was very honored to make the video but very nervous as well.  Luckily I had my trusty director, video editor, sidekick, and husband Ryan helping me.  He was so wonderful to help me with the filming and editing and he put in a lot of hours to help make sure that the video was top-notch (or at least somewhat humorous).   Thanks Ry! (your payment of beer is in the fridge ;)).

Pumpkin Tomato Pasta

8 oz. whole grain spaghetti pasta
1 TBS extra virgin olive oil
2 whole cloves garlic, chopped
1/2 cup chopped white onion
1/2 jar Newman's Own Tomato & Garlic Pasta Sauce
1 cup canned pumpkin puree
Chopped walnuts (if desired) 

Cook pasta according to directions.  Heat olive oil on medium high heat for about a minute.  Add garlic and onion and cook until softened and simmering.  Add pasta sauce and pumpkin puree.  Cook until heated through and simmering.   Add drained spaghetti noodles to sauce and mix well.  Top with Parmesan and chopped walnuts and serve with side salad and garlic bread.

Congratulations Josie! How exciting! I can't wait to make this recipe. Have you ever tried not breaking the pasta? It's much more fun to twirl and eat long pieces!

Thanks Alicia! Congrats to you too (I hear you have a little one on the way)! I have done pasta both ways...I usually break it in half because I'm not very good at the twirling and it ends up just being messy for me! haha. But I will have to practice ;)
