Some very lovely friends picked some apples, pears, and plums from their trees in their own backyard and brought them to us for a housewarming gift. It was a great gift and a perfect way to "warm our house" when I baked this apple pear & plum crumb. I'm pretty sure everyone I know has been making apple crisps & pies like crazy lately...so I'm sure this is nothing really mind blowing to you. 'Tis the season for apple picking after all. But if you have some apples around and want to make something new, give this crumb a try.
Hope you are enjoying fall and all the fruit it brings...
Apple Pear Plum Crumb
Fruit Filling
3 apples peeled and seeded
3 pears, peeled and seeded
1 1/2 cups plum
1/4 cup brown sugar
2 tablespoons cornstarch
½ tsp. lemon zest
a pinch of cinnamon
Crumb Topping
3/4 cup rolled oats
3/4 cup flour
1/2 cup brown sugar
3/4 teaspoon ground cinnamon
Big pinch of salt
1/3 cup butter, melted
Directions:
1. Preheat the oven to 400 degrees F and place a rack in the center.
2. Rinse all the fruit. Cut the apples, pears and plums into bite-sized chunks. Put in medium bowl.
3. In a small bowl, whisk together the sugar, cornstarch, lemon zest, and cinnamon. Sprinkle it over the fruit and gently toss to thoroughly combine. Transfer the fruit mixture to an 8×8 baking pan.
4. To make the crumb topping, whisk together the oats, flour, sugar, and ground cinnamon. Stir in the butter with a fork until a coarse, dough-like topping forms. Sprinkle it in chunks over the fruit in the pan.
5. Bake the crumble for 20-25 minutes, or until the topping is golden brown. Serve with ice cream.
